In recent years, aging green coffee beans inside ex-whisky casks has become a massive trend in the specialty coffee scene, imparting rich oak notes and malty undertones to the brew. But what happens if we reverse this process? What kind of extraordinary flavor is born when a whisky is matured inside a barrel that previously housed aromatic coffee beans?
While cask-aged coffee is highly popular, actual "Coffee Cask" whiskies are exceptionally rare. This is partly because strict Scotch whisky regulations explicitly ban such non-traditional practices. Furthermore, because these coffee-infused barrels are incredibly scarce, commercial distilleries rarely have the motivation to experiment with small-batch production.
However, for a micro-distillery driven by the ethos of "one batch, one bottle," this untamed frontier is the perfect playground. Partnering with the historic Bankoku Coffee, celebrating its 65th anniversary, they placed a premium selection of Guatemalan, Colombian, Ethiopian, and Indonesian coffee beans into two selected bourbon barrels. After transforming them into rich "Coffee Casks," they filled one with non-peated spirit and the other with heavily peated spirit for a meticulous 3-month finish, creating two radically distinct flavor profiles.
Tasting the Peated Edition reveals a nose dominated by intense, dark-roasted espresso, immediately followed by gentle peat and campfire smoke. The palate entry is silky and smooth, balancing the sweet richness of malt against the sophisticated bitterness of black coffee, supported by an earthy peat backbone. It concludes with a harmonious, beautifully integrated coffee and peat trail. This highly collectible single cask release is limited to only 300 bottles per expression.
