The purpose of Yuzawa Shuzo in creating this "It’s The Key" is to attract more red and white wine lovers into the world of sake. In addition to having the sweet and sour taste of white wine, the brewery has also used the "single mash" technique to adjust its alcohol content to only 12%, making it easy to drink and delicious!

When the work was first launched in Japan, due to its "super rich and intensely sweet and sour" flavor, it was once called a "heretic," yet it also received fairly high praise at the same time. If expressed in numerical terms, the Sake Meter Value (SMV) of "It’s The Key" is an astonishing "-40," and the acidity is as high as "4.6"!!! You will be amazed that sake can express such flavors!

Open and taste! In terms of aroma, the first thing you smell is a sweet and sour fruity fragrance. Although there is a faint rice koji aroma behind it, it is also easy to give people the illusion that this is a baijiu. The first impression when tasting is as sweet as Moscato, and then you gradually feel the fruity acidity like Riesling. The very sweet and very sour flavors coexist in the mouth at the same time, but the feeling is a wonderful balance.
