Even though new whisky distilleries like Atsumi and Shizuoka may not yet have the age to produce high - year - old whiskies, and traditional whisky giants such as Suntory and Nikka seem to have lost the desire to bottle high - year - old whiskies in recent years (after all, NAS is also highly sought after in the market...). In Japan, probably only small, historic distilleries like Akashi will still produce single - cask whiskies over 10 years old...
The work introduced this time was distilled by Akashi Distillery in 2009, using 10ppm light peated malt as the raw material. After 12 years of aging in sherry casks, it was bottled at 60 degrees high-proof. The official description states that the aroma of this work includes black cherries, apricots, sherry, chocolate, and a hint of mint and honey. The body is quite rounded, with a balance of sweet, sour, and spicy flavors. Sounds like a pretty good sherry cask whisky!
