The reason it is called Double Distilleries is that it is made by blending Hakushu's sherry cask original whisky and Chichibu's Mizunara cask original whisky. After blending the two whiskies with completely different styles, it brings out interesting layers, which led to its being awarded the Best Non-Scotch Blended Malt Whisky by the WWA in 2009.
In terms of aroma... it's like the feeling of刨木時刨木 (planing wood) -> planing wood when planing wood in the middle school's woodworking room嗅到隔壁家政房傳來絲絲焗餅乾烘香 (smelling the faint aroma of baking cookies from the domestic science room next door) in the middle school's woodworking room, smelling the faint aroma of baking cookies from the domestic science room next door. Specifically, the wood scent brought by the 水猶桶 (water oak barrel) -> water oak barrel is very prominent, but upon closer inspection, there is also a roasting aroma. After adding two drops of water, the chocolate and fruity sweetness brought by the 雪莉桶 (Sherry barrel) -> Sherry barrel can be better released, making the aroma more diversified. The initial spiciness reveals the fact that this wine has a relatively short Vintage (vintage), but the subsequent complexity of bitter wood flavors mixed with fruity notes makes one admire the bartender's skill. The aftertaste is of medium length, very dry, with a hint of smokiness.
If you are not averse to the taste of wood and are interested in trying the legendary taste of Japanese Mizuwari, this Double Distilleries is a very good choice. In fact, given that the original spirits from Hakushu have been largely consumed, it is foreseeable that the day of discontinuation for this liquor is not far away...
