You may have tried many kinds of umeshu, but a “spoonable” umeshu you can actually eat is truly one of a kind! Making an “edible” umeshu is no easy feat. Each petite bottle of this umeshu uses a lavish seven ripe Nanko plums, packing in so much fruit pulp that it’s satisfyingly chewy. This umeshu is like a thick plum jam—you’ll need to shake the bottle thoroughly before pouring. The texture is rich and full-bodied, with generous strands of plum flesh that go on and on, tempting you to take a bite. The mouthfeel is satisfyingly dense and the plum aroma is intense. Sweetness is moderate, with a wave of tartness rolling in through the finish. Despite its thickness, it’s never cloying or heavy—deliciously edible and drinkable!

Mix it 1:4 with soda water—thanks to the abundant plum pulp, every sip is still filled with fruity bits, making it a truly refreshing summer drink. This umeshu is made by Mori Kawaten, a company in Gifu Prefecture. Interestingly, Mori Kawaten started out as a roof repair business. But with Hida City buried in snow during winter, roof work grinds to a halt, leaving the owner with time to experiment with new alcoholic drinks during the cold season. Since launching its first beverage in 2023, Mori Kawaten has already picked up awards from IWC and World Spirits, becoming a “brewery accidentally disguised as a construction company.”
