As the world changes rapidly, many traditions eventually become obsolete. Yet, there remains one time-honored craft that remains the definitive gold standard across eras: the centuries-old Méthode Traditionnelle (secondary in-bottle fermentation).

In the 17th century, European winemakers accidentally left active yeast inside wine bottles. The yeast consumed residual sugars, producing carbon dioxide that dissolved into the liquid under high pressure—unwittingly inventing sparkling wine. Winemakers eventually refined this happy accident, deliberately adding sugar and yeast to bottled wines to induce a controlled secondary fermentation. This confined space is the only way to achieve the immense pressure required to integrate fine bubbles into the liquid. Over time, the breaking down of yeast cells (autolysis) releases compounds that render the texture exceptionally silky while imparting captivating notes of toasted brioche.

The "Traditional" sparkling lineup represents the pinnacle of Kyoto Tamba Winery's craft. This "Vintage 2017" expression is blended from an astonishing field assembly of 29 grape varieties, including Pinot Blanc, Trebbiano, and Chardonnay. Following primary fermentation, the wine underwent an extraordinary 7-year aging process on the lees inside the bottle before disgorgement. This highly exclusive release is limited to only 1,975 individually numbered bottles.

On the nose, aromas of fresh-baked bread mingle with zesty lemon and bright citrus. The palate delivers incredibly refined, pinpoint effervescence with a silky, elegant mouthfeel. Driven by medium-high acidity and an enduring finish, it closes with a sophisticated, bone-dry touch of structural bitterness—making it an impeccable, world-class gastronomic food-pairing wine.
