Over 90% of sparkling wines on the market are either white or rosé. Red sparkling wine remains an absolute rarity for a simple reason: tannins. The soul of red wine lies in the astringency derived from grape skins, but when carbonated, coarse bubbles can harshly amplify this bitterness. Consequently, crafting a premium sparkling red is a notoriously high-risk venture.
However, Ajimu Winery from Oita Prefecture has successfully mastered this challenge using a brilliant two-fold strategy. First, they focused on the slightly sweet "Sec" profile, selecting "Shokoshi", a Japanese-cultivated grape known for its vibrant fruitiness and rich natural sugars. Second, they utilized the costly "Method Traditionnelle" (secondary fermentation in the bottle) to create exceptionally fine, velvety bubbles that smoothly counteract the tannic astringency.
Upon pouring, the deep purplish-red liquid presents a stunning visual feast as the elegant bubbles ascend. The bouquet bursts with dark berries like blueberries and blackcurrants, layered with a touch of black pepper. On the palate, the sophisticated, gentle effervescence beautifully envelops the grape acidity, dark berry sweetness, and soft tannins.
Ajimu Winery is a legendary name that consistently dominates Japanese wine awards, backed by the brewing expertise of Sanwa Shurui (the parent company of the world-famous "iichiko" shochu). This exceptional vintage is released alongside two other sparkling masterpieces from the estate: a Merlot Sparkling Rosé and a Chardonnay Sparkling Wine.
