The creator, Hachibuko (Honey Koubou), is located in Kimitsu, Chiba Prefecture. While famous locally for their interactive beekeeping experiences, they were a hidden gem in the winemaking world. The secret to their exceptional mead lies in three uncompromising rules: 1) Using 100% pure domestic Japanese honey; 2) Zero added fruits or chemical flavorings, relying strictly on honey, water, and yeast; and 3) Utilizing different natural flower nectars to masterfully control the flavor profile—a feat only a true professional apiary could accomplish.
