Traditionally, Vermouth is a wine-based fortified wine infused with brandy and botanicals, typically hovering between 15-18% ABV. Celebrated for its herbal depth, it serves beautifully as an aperitif or a foundational cocktail modifier.
This innovative spirit adopts the vermouth method but reinvents it entirely by substituting wine with a sake base, fortifying it with rice shochu, and infusing it with four distinctly Japanese botanicals: Yuzu, Sudachi, Sansho pepper, and Yomogi (Japanese mugwort). Because of this radical base shift, it defines a completely new category of craft spirit (the name "Bermutto" mirrors the Japanese pronunciation of "Vermouth").
