Makurazaki boasts a naturally high sweet potato sugar profile, delivering a remarkably rounded mouthfeel and a rich, honeyed aftertaste. When blended with hot water at the traditional 6:4 ratio, the rising steam fills the room with a comforting aroma. The secret to its profound flavor lies in an unyielding dedication to ancient methods. Makurazaki is fermented exclusively in traditional earthenware pots called Kametsubo. Over decades of continuous use, these porous clay vessels absorb and nurture indigenous micro-flora known as Kuratsuki (brewery-conditioned) yeast, which refines and rounds out the spirit. The 99 legendary Kametsubo pots used for Makurazaki have been in active service since the Meiji Era—boasting over a century of heritage. Their ancient brewing power is truly unparalleled.
