Why is Champagne cask gin so rare? Most Champagne brands today have abandoned the traditional practice of fermenting Champagne in oak barrels, switching to stainless steel tanks instead. Only a handful of Champagne houses still uphold the tradition of oak barrel fermentation—Henri Giraud being one of them (the other well-known name is Krug). These premium Champagne casks are already incredibly hard to come by. When filled with the elegance of KI NO BI gin, the result is truly precious. Let’s open a bottle and taste it!
Pouring into a glass, the champagne-gold liquid is instantly inviting. On the nose, you’ll find intense, zesty citrus peel. The palate reveals the familiar KI NO BI base notes of yuzu and lemon peel, with a more subtle juniper presence. After a hint of fruit acidity, waves of vanilla emerge, with citrus notes ever-present. Thanks to the cask aging, the alcohol is very mellow, and the glass lingers with rich, aged orange peel aromas—fantastic!
Besides being enjoyed neat, the official suggestion is to mix Edition G with tonic. Try a 1:1 ratio—the aromas are more restrained, but the taste is like a glass of Champagne enhanced by powerful citrus notes, smooth and refreshing. Personally, I find it excellent neat, but it also makes for an outstanding cocktail base.
