Add in the comforting flavour of natural honey, and it becomes easy to understand why this ancient style of alcohol has captured so many hearts. However, because honey itself is costly, truly authentic meads made from 100% pure honey remain surprisingly rare.

This time, we introduce a remarkable creation from “Honey Atelier,” a professional apiary based in Chiba Prefecture, Japan. Rather than relying on flavourings or additives, they insist on crafting their mead using only three simple ingredients — pure honey, yeast, and water — allowing the natural beauty of honey to shine through in its purest form.

Just as grape varieties shape the character of wine, the floral source of honey dramatically influences the flavour of mead. Nectar gathered from different blossoms creates completely different aromas and personalities. The two expressions introduced here — “Lychee Blossom Mead” and “Honey Dessert Mead” — perfectly demonstrate the incredible diversity of honey-based brewing.

The “Lychee Blossom Mead” is fermented entirely from lychee blossom honey. Since lychee honey is relatively familiar to many Hong Kong drinkers, the flavour immediately feels approachable and nostalgic.

On the nose, it reveals rich floral honey aromas with a fresh and elegant character. The palate is smooth and rounded, offering natural floral sweetness and gentle honeyed notes, followed by a brief touch of bitterness that gradually transforms into a lingering lychee-like sweetness. Delicate, refined, and exceptionally well-balanced.

The “Honey Dessert Mead,” meanwhile, is crafted with an especially generous amount of honey during fermentation, allowing it to retain a deeper honey aroma and luxurious sweetness.

Its aroma combines intense honey richness with a subtle touch of acidity. Full-bodied and velvety on the palate, it delivers wave after wave of pure honey sweetness from the very first sip. Despite its richness, the natural flavour of authentic honey prevents it from becoming overly cloying.
