What is the fundamental difference between wine and juice? Most would say alcohol, but Hitoshi Nomura, a veteran bartender from Wakayama, offers a different perspective: "The difference lies in the aroma." Nomura observed that while juice lovers focus purely on taste, a fine wine or spirit is defined by its olfactory complexity. Without aroma, even the best flavor falls flat.
Determined to create a non-alcoholic beverage that captivates connoisseurs, Nomura and his wife handcraft these elixirs in a traditional inn nestled in Nagano's Utsukushigahara Onsen. He named his creation "SOUKONMOKUHI" (meaning "Roots, Stems, Bark, and Leaves").
The first expression, "Kusa-Wake" (The Reason of Herbs), is a blend of cardamom, ginger, vanilla, coriander seeds, and lemon. Whether neat, on the rocks, or with soda, it surprises the senses. The pungent spice of ginger and cardamom is elegantly softened by lemon's acidity, achieving a masterful balance of sweet, sour, and spice with a finish as long and sophisticated as a fine spirit.
The second expression, "YOH" (Sun), is a tribute to cinnamon. Crafted using Cassia, Cinnamon, and Cinnamon Leaf with a touch of lemon, it delivers a multi-dimensional cinnamon profile. The palate is gently stimulated by spice, enriched by the soothing sweetness of lemon, and concludes with a crisp, clean finish.
Though entirely alcohol-free, the complex aromas and spicy warmth trick the brain into a delightful "tipsy" sensation—a truly intriguing experience.
