Dassai Umeshu 2025 has arrived! Produced only once a year, just a few hundred bottles are made annually—hardly enough for Dassai’s tens of thousands of fans worldwide. Even in Japan, you’d need serious luck to find it at special events like the National Umeshu Festival. Outside of Japan, it’s mostly available at DASSAÏ JOËL ROBUCHON in Paris... This is a true collector’s gem, and those who manage to get a bottle cherish every sip.

This umeshu is overseen by the National Umeshu Research Association of Japan, essentially a dream collaboration between Dassai and the nation’s top umeshu experts. Dassai began developing this recipe in 2015, and after three years of trial and error, the first batch debuted in 2019. Since then, only a few hundred to 3,000 bottles are released each year, selling out instantly every time. The base is Dassai’s legendary 23% Junmai Daiginjo, infused with the finest Wakayama Nanko plums. Let’s see what makes this pinnacle of Dassai umeshu so exceptional!

When poured, the liquor shows a refined rose-gold color. Because the base is a fruit-forward, elegant daiginjo, it’s best served in a white wine glass to fully appreciate its delicate qualities. On the nose, you’ll find notes of apricot and fresh fruit. The palate is exceptionally light and refined, with a refreshing acidity that immediately stimulates the taste buds. The finish combines the lush fruitiness of the Dassai 23 Daiginjo with nuanced plum notes, resulting in a long, luxurious aftertaste. Unlike most umeshu, which can be overly sweet for food pairing, Dassai Umeshu’s acidity and elegance make it a perfect match at the table.

「獺祭」為山口縣旭酒造生產的優質清酒品牌。旭酒造創建於 1770 年江戶時代,位於山口縣周東町(現為岩國市)獺越深山中。 旭酒造取地方獺越的「獺」字,以「河獺將捕獲的魚貝排在岸上,猶如祭典一般」之景,把酒取名為「獺祭」。酒造以「釀酒是創造夢想。 開拓日本酒新時代」精神,不限於傳統制法,力求革新造出更優良的清酒。

旭酒造最初以釀造普通清酒「朝日富士」為主,直至1984 年第三任社長櫻井博志接手後,便全面優化釀酒技術與質素;安裝完善的空調系統,常年保持在 攝氏5 度,實行當時業界罕見的「四季釀造」;同時,開發了只做純米大吟釀,僅使用日本酒米之王「山田錦」 的「獺祭」系列並由2004 年開始將「獺祭」系列出口到世界各地。

「獺祭」的香氣華麗豐饒,味道似完熟哈蜜瓜、蜂蜜般的甜味,果香優雅。 經常被日本政府挑選為國宴酒,招待來自世界各國的貴賓。 安倍晉三在擔任首相期間,曾向俄羅斯總統普京和時任美國總統歐巴馬贈送了獺祭。 2023年4月,G7外長會議在日本長野縣輕井澤舉行,外務大臣林芳正亦在晚宴上為外長提供了獺祭,以推廣日本飲食文化。

獺祭在本地及全球都獲得了成功,2022年銷售額為 165 億日元,不愧為日本第一清酒!系列中的「獺祭 二割三分 純米大吟釀」,連續3年在 International Wine Challenge 中獲得金賞受賞!國外亦受賞無數,不但在 Monde Selection(歐洲最負盛名的食品競賽)上榮獲 「最高金賞」、於美國洛杉磯國際葡萄酒與烈酒大賽金獎,還與米芝蓮世界名廚喬爾,侯布雄(Joel Robuchon)在巴黎合作開立「DASSAI par JOEL ROBUCHON」。 為配合國際化的發展,旭酒造於2022年於美國設廠,成立名為Dassai Blue 的新品牌,亦計劃逐步從進口日本大米過渡到於美國種植米王山田錦。
