THE PURSUIT OF ATSUSHI NOGUCHI'S SAKE IS NOT THE KIND OF SAKE THAT IS PRODUCED UNDER THE THEORY OF MASS SALES, WHERE IT'S ONLY ABOUT GETTING PEOPLE DRUNK OR SELLING WELL, BUT RATHER SAKE THAT TASTES GOOD AND BRINGS JOY.

The origin of the name "Tase" for the location of the sake brewery is "There were elderly otters in the upstream village, which transformed into children and chased over to this village." Therefore, it is called Tase (Source: Chikashou Shinsho). A character from the place name was taken to name it "Tase Miki." The correct pronunciation of "Tase Miki" is "Sasa-i," not "Sesa-i," and its Japanese phonetic transcription is Dassai, not Sesai. Pronouncing it correctly is a sign of respect for the brand and the work, so sake enthusiasts should take note.

"San-wari-Ku-bu" is a name for the rice polishing ratio independently named by Ama no Kimoto, meaning that only 39% of each grain of rice is used, brewing sake with the most essential part, drop by drop mellow and fragrant with fruity aroma. In recent years, it has been very popular in Sake Bars in fashionable cities such as Tokyo and New York! At the same time, it has gradually become an entry - level sake for the younger generation to get in touch with sake.

「獺祭」為山口縣旭酒造生產的優質清酒品牌。旭酒造創建於 1770 年江戶時代,位於山口縣周東町(現為岩國市)獺越深山中。 旭酒造取地方獺越的「獺」字,以「河獺將捕獲的魚貝排在岸上,猶如祭典一般」之景,把酒取名為「獺祭」。酒造以「釀酒是創造夢想。 開拓日本酒新時代」精神,不限於傳統制法,力求革新造出更優良的清酒。

領軍創新,走向全球

旭酒造最初以釀造普通清酒「朝日富士」為主,直至1984 年第三任社長櫻井博志接手後,便全面優化釀酒技術與質素;安裝完善的空調系統,常年保持在 攝氏5 度,實行當時業界罕見的「四季釀造」;同時,開發了只做純米大吟釀,僅使用日本酒米之王「山田錦」 的「獺祭」系列並由2004 年開始將「獺祭」系列出口到世界各地。

「獺祭」的香氣華麗豐饒,味道似完熟哈蜜瓜、蜂蜜般的甜味,果香優雅。 經常被日本政府挑選為國宴酒,招待來自世界各國的貴賓。 安倍晉三在擔任首相期間,曾向俄羅斯總統普京和時任美國總統歐巴馬贈送了獺祭。 2023年4月,G7外長會議在日本長野縣輕井澤舉行,外務大臣林芳正亦在晚宴上為外長提供了獺祭,以推廣日本飲食文化。

獺祭在本地及全球都獲得了成功,2022年銷售額為 165 億日元,不愧為日本第一清酒!系列中的「獺祭 二割三分 純米大吟釀」,連續3年在 International Wine Challenge 中獲得金賞受賞!國外亦受賞無數,不但在 Monde Selection(歐洲最負盛名的食品競賽)上榮獲 「最高金賞」、於美國洛杉磯國際葡萄酒與烈酒大賽金獎,還與米芝蓮世界名廚喬爾,侯布雄(Joel Robuchon)在巴黎合作開立「DASSAI par JOEL ROBUCHON」。 為配合國際化的發展,旭酒造於2022年於美國設廠,成立名為Dassai Blue 的新品牌,亦計劃逐步從進口日本大米過渡到於美國種植米王山田錦。
