Gyokuro is often considered the pinnacle of Japanese tea — low in bitterness, rich in umami, and elegantly sweet. When it comes to gyokuro, tea lovers always think of Yame in Fukuoka, which has topped Japan’s national tea competition in the Gyokuro category for 23 consecutive years. Today, “Yame-cha” has become synonymous with premium Japanese tea.
Based in Yame, Kitaya Brewery has crafted two outstanding tea-based spirits, each with a distinct method and character. Both showcase the excellence of Yame tea, and together they make a must-try set.
1️⃣ Ama-no-Bi Midori Hōjicha (Roasted Tea)
Blending Yame tea leaves roasted to different degrees, infused in rice shochu and lightly sweetened. Amber-brown in color. On the rocks, the aroma recalls roasted tea and chocolate bread. Smooth and mellow, with just enough sweetness to soften bitterness. Rich yet balanced, with a lingering roasted finish. Also excellent with milk.
2️⃣ Ama-no-Bi Midori Gyokuro
Fermented with gyokuro leaves, sake rice, and rice koji, then distilled at low temperatures. Crystal-clear, unsweetened, pure shochu style. On the rocks, it reveals green tea freshness layered with fruity notes from rice shochu. Soft texture, clean tea flavors, finishing with a touch of fruitiness. Refreshing, elegant, and sugar-free.
