How did they achieve this one-of-a-kind texture? Ikekame Shuzo from Fukuoka previously released a “Jelly Umeshu” by adding a natural, fiber-rich thickener, giving the umeshu a jelly-like consistency. For this “Fluffy Yuzu Liqueur,” they used the same thickener but adjusted the ratio, creating a fluffiness that isn’t too sticky and still preserves the crisp refreshment you expect from yuzu liqueur.
