Just like Chanel’s N°5 perfume, Alembic Distillery named its very first gin “No.8” after their 8th experiment—and for its blend of 8 botanicals. The bold black ceramic bottle features a minimal “8” design inspired by two grains of rice, with a unique matte texture that stands out before you even take a sip.
The botanicals go beyond the usual Japanese citrus and lemon peel; No.8 also features “Kuro-moji” (spicebush) and angelica seeds—herbs often used in essential oils for their calming properties. How soothing is it? Let’s find out!
Neat tasting: The aroma offers a blend of citrus and herbal essential oil notes, creating a relaxing mood. On the palate, you get a hit of mintiness, then a gentle lemon peel sweetness, finishing with lingering fresh herbal notes—crisp and invigorating. Perfect for unwinding after work, neat or on the rocks.
With tonic: The aroma softens, shifting toward more bittersweet citrus peel. Grapefruit and citrus become prominent, minty notes subside, leaving a refreshingly cool finish. Excellent with hot pot, BBQ, or grilled dishes.
Alembic Distillery is located in Ono-machi, Kanazawa, Ishikawa Prefecture—one of Japan’s five famous soy sauce regions, filled with historic breweries. The distillery nearly closed during the pandemic, but was saved by support from local soy sauce makers, cementing Alembic as a symbol of youthful energy in the community. Locals hope Alembic’s success will attract more young people and revitalize the town!
