"Da Qi," a name that commands respect in the sake world. The product we are introducing this time is the most classic work of Da Qi Sake Brewery - Minowamon. This product won the highest honor, the Platinum Award, for three consecutive years at the Japan Local Sake Show from 2009 - 2011. Winning the award three times enabled it to enter the hall of fame of famous sakes and could no longer participate in the competition. Later, it went out of Japan and was highly praised by the French authoritative wine review La Revue du vin de France for its quality being comparable to that of top - notch white spirits. Is it really that good? Let's have a try right away!

Pour the wine into a glass, and the rice aroma seeps out, carrying a hint of apple's crispness, with a refined and restrained fragrance. The wine's body is extremely smooth upon tasting, and "creamy" would be a good adjective to describe it. The gentle rice sweetness slides over the tongue like cream, and the fine texture of the wine exhibits the elegance of a white spirit. The acidity is moderate, and after swallowing, there is even a hint of the aroma of burrata cheese slowly emerging! No wonder it's a wine that everyone praises! This sake is very suitable for pairing with Western cuisine; cheese, duck meat, oysters, or crustacean seafood such as lobster and crab can all produce a good chemical reaction with it.

BEHIND THE SEIMAIBUAI (MILLING RATE) NUMBER OF DAICCHI SAKE, THE TERM "SUPER FLAT SEIMAIBUAI" IS ALWAYS WRITTEN IN PARENTHESES. HOW TO UNDERSTAND IT? THE SUPER FLAT POLISHING TECHNOLOGY IS A UNIQUE RICE POLISHING TECHNOLOGY OF DAICHI SAKE BREWERY, WHICH POLISHES THE SAKE RICE INTO A "SUNFLOWER SEED SHAPE" RATHER THAN A SPHERICAL SHAPE, REMOVING IMPURITIES FROM THE SAKE RICE TO THE GREATEST EXTENT. TAKING KIJO GATE AS AN EXAMPLE, THE OFFICIAL INDICATES THAT ITS SUPER FLAT SEIMAIBUAI OF 50% IS EQUIVALENT TO THE DAILY SEIMAIBUAI OF 34%! NO WONDER THE SAKE QUALITY IS SO DELICATE!

大七酒造 - 日本酒界中令人肅然起敬的名字

大七從江戶時代便開始釀製酒品,至今已有超過兩百年歷史。其出品的妙花蘭曲、箕輪門、龜鏡,甚至是大七極上品梅酒,都是燴灸人口的經典作品,追隨者眾,甚至是很多飲家心中至愛。
除了出品的質素奇高,大七至今仍然堅持以「生酛」方式釀造清酒。生酛是釀造清酒最古老的方式,蔵人(釀酒人)硬生生以木槳來將蒸米,米麹和水混合攪拌,非常耗費人力及時間。在各酒廠都轉為以科技方式速釀清酒的時候,大七仍堅持生酛方式,非常受人尊重。
大七另一個特別的地方是其獨門的研磨酒米技術-「超扁平研磨技術」。此技術會將酒米打磨至「瓜子型」而非圓球形,最大程度的去除酒米的雜質。按箕輪門為例,官方指其超扁平精米步合50%,就等於日常精米步合34%的細滑。經典的酒造,見到其出品都可一試!
