From Fukui’s renowned Benichu brand — famed for its low-sugar, high-acidity umeshu — comes another masterpiece.

Brewed by Wakasa Mikata Shuzo in Fukui, this umeshu uses vodka as the base spirit, infused with Koume (Benio) plums, known for their bright acidity.
After infusion, the liquor is matured in traditional Echizen-yaki earthenware pots, adding depth and complexity before bottling at 16%.
On the nose, gentle cinnamon and plum acidity tempt you immediately.
On the palate, the texture is velvety — the natural, clean plum sourness spreads gracefully, leaving a soft, rounded finish.
Sweetness is minimal; the flavor is pure and elegant, with just enough alcohol warmth to complete the balance.
When mixed 1:1 with soda, the result is light, crisp, and deeply refreshing — the plum acidity brightens beautifully, pairing effortlessly with fried chicken, hotpot, or snacks.

The label bears the mysterious number “291”, written on rustic washi paper.
In Japanese wordplay, “291” reads fu-ku-i, meaning Fukui, the prefecture where both Benichu and the celebrated Echizen pottery originate.
Low-sugar umeshu is notoriously difficult to craft — it risks turning bitter or flat without enough sweetness.
